Mini Pies

What do you do when you are used to cooking for a large family and then in what seems the blink of an eye, you are dwindled to feeding only two?  I found this to be the hardest challenge of my emptying nest.  I usually cooked in large quantities.  We had three growing boys, a healthy girl and many friends were always welcome at our table.  Pull up a chair and grab a plate, was the standard at our home during the growing up years.  So, fast forward (and I do mean fast) 27 years and everyone has their own lives to lead.  While, happy that they are all leading these independant lives, I found it very hard to begin cooking for only two.  The other day, when I was workng on canning apples and making jars of apple pie filling, I thought about how big a pie is for only two people.  How could I make smaller pies?   Here is my answer to the question.

1 jar of pie filling
roll out pie crust and cut into pieces
spray muffin cups with non-stick spray
fit the pie crust pieces into the muffin cups
 

Bake at 350 degrees F for 25 minutes or until
pie filling is baked and crust is golden brown
 

let mini pie cool
use a knife to losen edges and
Serve and Enjoy!
